The Recipe:
Ingredients (serves two):
- 1/2 lb gluten-free spaghetti.
- 4 eggs.
- 1 clove garlic, minced.
- 5 tablespoons extra-virgin olive oil.
- 1/2 cup shredded or grated Parmesan cheese.
- Salt and Pepper.
Directions:
- Bring a large pot of water to a boil. Toss in your gluten-free spaghetti and cook according to the directions on the package.
- While the spaghetti is cooking, cook the garlic in olive oil in a skillet over medium-low heat. Cook for about 3-4 minutes, until the garlic has started to brown. Remove from heat and set aside.
- After cooking the garlic, fry the eggs in olive oil in a skillet over medium heat. Cook until the egg whites are set and the yolks are still soft and runny.
- Combine the finished spaghetti and garlic. Place the eggs on top.
- Season with the salt and pepper to your liking, then sprinkle the Parmesan cheese on top of everything.
- Break the eggs up in the spaghetti and enjoy!
